You have spent twenty minutes on the stone, your arms ache, and the knife still slides off a tomato skin. It is one of the most deflating moments in a kitchen — and it is almost never because you bought a bad knife or a bad stone.

In nearly every case, a knife that won't take an edge is failing for one of seven reasons. Six of them are technique, one is kit. All of them are fixable in an afternoon, and none of them require you to be a professional sharpener.

1. You never raised a burr

This is the big one. A knife edge is two ground surfaces meeting at a line. Until those two surfaces actually meet, there is no edge — there is a flat strip of metal a few microns wide, and no amount of polishing will make it cut.

The burr is your proof that they've met. When you have removed enough steel from one side, a fine ribbon of metal folds over onto the opposite side. You can feel it by running a fingertip off the edge (never along it): it catches, like a tiny lip.

Most people stop before the burr forms. They do ten passes a side, feel nothing conclusive, and move to a finer stone — which polishes a blunt edge into a shiny blunt edge.

The fix: work one side only until you can feel a burr along the entire length, from heel to tip. That might take fifty passes on a neglected knife. Only then flip and repeat on the other side. Pay particular attention to the tip and the heel. Both get missed because the natural sharpening stroke lifts off early at the tip and stops short at the heel.

2. Your angle keeps changing

Steel does not care how hard you push. It cares that every stroke removes metal from the same place. If your wrist rocks by a few degrees between passes, you are grinding a series of slightly different bevels that never converge into a single apex — the result is a rounded, convex edge that feels smooth and cuts badly.

The fix: pick an angle and hold it, mechanically. Two things help enormously:

  • Colour the bevel in. Run a permanent marker along the edge bevel, do three passes, and look. If the marker is gone from the very edge, your angle is right. If it's gone from the shoulder but still sits on the edge, you're too shallow. If it's only gone at the edge and the shoulder is untouched, you're too steep.

3. You started on a stone that's far too fine

A 3000 or 8000 grit stone removes a tiny amount of steel. That is the point of it — it refines an edge that is already formed. Ask it to reshape a genuinely blunt knife and you will be there for an hour with nothing to show.

4. Your whetstone has gone hollow

Whetstones wear. Because most of us sharpen in the middle of the stone, the middle wears fastest, and after a few months you're working on a shallow dish rather than a flat plane.

A hollow stone can't reach the centre of a straight edge properly. The symptom is specific and easy to spot: the heel and the tip of your knife come up sharp while the middle third stays stubbornly dull, no matter how many passes you do.

Flattening isn't an occasional deep-clean — on a stone in regular household use, checking it every few sharpening sessions is reasonable. It takes two minutes and it is the difference between a stone that works and one that quietly stops.

5. You left the wire edge on

Here's the frustrating one. You did everything right, raised a proper burr on both sides, and the knife feels brilliant — for about three cuts. Then it's dull again.

That's a wire edge. The burr you worked so hard to raise is still hanging off the apex, folded over. It feels sharp because a thin ribbon of loose steel grabs at your thumbnail. It fails immediately because it's barely attached, and the first bit of real work tears it off, leaving a ragged edge behind.

The fix: deburr deliberately at the end of the session.

  • Drop your pressure to almost nothing — the weight of the blade alone.
  • Do a handful of very light alternating passes, one side then the other, on your finest stone.
  • Finish by stropping a few times on the rough side of an offcut of leather, a folded piece of denim, or even the edge of a cardboard box, edge trailing.

6. The stone is running dry or glazed

Water isn't decoration. It carries away the swarf — the slurry of steel and abrasive particles that sharpening produces. Let a stone run dry and that swarf packs into the surface, glazing it over. A glazed stone stops cutting and starts polishing, which brings you straight back to reason 1.

If the surface already looks shiny and feels slick rather than toothy, a light pass with a flattening plate will refresh it.

7. You're honing when you need to sharpen

A smooth honing steel does not sharpen. It realigns an edge that has rolled slightly out of true during normal use — genuinely useful maintenance, and the reason a rod brings a knife "back" so quickly when the edge is only tired rather than worn. But once the steel at the apex is actually gone, there's nothing left to straighten, and the rod does nothing.

A sanity-check order of operations

If you want one routine that avoids all seven problems, this is it:

  1. Check the stone is flat. Ruler across it, look for daylight.
  2. Prepare the stone properly and keep the surface wet throughout.
  3. Marker the bevel. Three passes. Adjust your angle until the marker clears at the very edge.
  4. Work one side on 1000 grit until you feel a burr from heel to tip. Don't rush this.
  5. Flip. Repeat until you feel the burr on the other side.
  6. Optional: refine on 3000+.
  7. Deburr — feather-light alternating passes, then strop.
  8. Test on paper, then a tomato.
