1. The paper test

Hold a sheet of ordinary printer paper by one corner so it hangs loose. Rest the heel of the blade near the top edge and draw the knife down and outwards in one smooth slicing motion.

A knife that cuts cleanly at the heel but tears at the tip has a worn tip — very common, and worth knowing, because you sharpen that section more.

This is the test worth doing most often. It's fast, it costs nothing, and it maps the whole edge rather than one spot.

2. The tomato test

A tomato is the honest kitchen test because the skin is taut and slippery and the flesh underneath gives no support. Set the knife on the skin and draw it back with no downward pressure at all — let the weight of the blade do the work.

Sharp: the skin parts on the first pass and the slice falls away without squashing. Blunt: the edge slides across the surface before it catches, or the tomato deforms and weeps juice before it cuts. If you find yourself pushing, that's your answer.

3. The fingernail test

Rest the edge lightly on your thumbnail at a shallow angle — no pressure, no movement. A sharp edge catches and stays put. A blunt one slides straight off.

Work along the blade in sections and you'll find exactly where the dull patches are. Keep it gentle: you're feeling for grip, not cutting anything. If you're at all unsure, use the paper test instead — it tells you the same thing without a blade near your hand.

4. The light test

Hold the knife under a bright light with the edge pointing towards you, and tilt it slowly. You're looking at the very apex of the edge.

A truly sharp edge comes to a point too fine to reflect anything — it disappears. A blunt edge has been rounded over by use, and that rounded surface catches the light as a thin bright line running along the blade. Bright glints in isolated spots rather than a continuous line usually mean small chips rather than general dullness, which is a different problem and needs a different fix.

Blunt, rolled or chipped — they aren't the same thing

This is the part most guides skip, and it's the part that saves you time. "Not cutting" has three common causes and each one wants a different response.

A rolled edge is the most common by a wide margin, and it's the least serious. The steel at the apex is still there, it has just bent over to one side through normal use. The knife feels dead, but the edge isn't gone. A few passes on a honing steel push it back into line and the bite returns immediately — no metal removed, no skill required.

A genuinely worn edge is what you get when the apex has been abraded away over months and the blade now ends in a rounded shoulder instead of a point. Honing won't help, because there's nothing left to straighten. This needs a whetstone to grind a fresh apex.

Chips are small pieces broken out of the edge, usually from contact with bone, a frozen ingredient, a glass or stone board, or the bottom of a sink. Hard, thin Japanese-steel blades hold a keener edge than softer Western steel, and the flip side of that hardness is that they chip rather than roll when abused. Chips need a coarse stone to take the edge back past the damage.

Quick diagnostic: failed the paper test but honing brings it back → it was rolled. Honing does nothing → it's worn, go to a stone. Bright dots along the edge and it snags in one spot → it's chipped.

Honing or sharpening — which do you actually need?

The two words get used interchangeably and they shouldn't be. Honing realigns an edge that's still there. Sharpening removes metal to create a new one. Honing is something you do often and casually; sharpening is something you do occasionally and carefully.

For most home cooks that means a honing steel every week or two of regular use, and a whetstone every few months. One thing worth saying plainly: pull-through sharpeners are a poor match for thin, hard Japanese-steel blades. Three habits that keep an edge longer

Use a wooden or plastic board. Glass, granite, marble and ceramic boards are the fastest way to wreck a good edge. Every cut lands the apex against something harder than the steel.
