Layered Cheesy Taco Casserole

Ingredients

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 packet taco seasoning

  • 1 can (10 oz) diced tomatoes with green chilies, drained

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup corn kernels

  • 1 cup salsa

  • 2 cups shredded cheddar cheese

  • 6 small flour tortillas, cut into quarters

  • 1/2 cup sour cream

  • 1/4 cup chopped cilantro

  • 1/4 cup sliced black olives (optional)

  • 1 jalapeño, sliced (optional)

  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.

  2. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.

  3. Add onion and garlic, cooking until softened, about 3 minutes.

  4. Stir in taco seasoning, diced tomatoes, black beans, corn, and salsa. Cook for 5 minutes.

  5. In the baking dish, layer half of the tortillas, half of the beef mixture, and 1 cup of cheese.

  6. Repeat layers, finishing with the remaining cheese on top.

  7. Bake for 25-30 minutes or until cheese is melted and bubbly.

  8. Let rest for 5 minutes before serving. Top with sour cream, cilantro, olives, and jalapeño if using.
