Classic Southern Pineapple Custard Pie with Flaky Butter Crust

Ingredients

  • 1 unbaked 9-inch pie crust (homemade or store-bought)

  • 1 can (20 oz) crushed pineapple in juice, drained

  • 3/4 cup granulated sugar

  • 1/4 cup brown sugar

  • 1/4 cup cornstarch

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 2 large eggs, lightly beaten

  • 3 tablespoons unsalted butter, melted

  • 1 teaspoon vanilla extract

  • 1 tablespoon lemon juice

Directions

  1. Preheat oven to 375°F (190°C). Place the unbaked pie crust into a 9-inch pie dish and crimp the edges.

  2. In a large mixing bowl, combine drained pineapple, both sugars, cornstarch, salt, cinnamon, nutmeg, eggs, melted butter, vanilla, and lemon juice. Mix well until smooth and well blended.

  3. Pour the filling into the prepared pie crust and spread evenly.

  4. Bake for 45–50 minutes, or until the filling is set and the top is golden brown.

  5. Let the pie cool completely at room temperature to allow it to set.

  6. Serve chilled or at room temperature, with whipped cream if desired.
