It's one of the most common worries we hear before someone buys their first proper Japanese-steel knife: these blades are hard and thin — won't they chip? It's a fair question, and an honest answer matters more than a sales pitch.

So here it is. No, a good Japanese-steel knife does not chip easily in normal kitchen use. It can chip if it's used for jobs it was never designed for, because the steel is harder and the edge finer than a typical European knife. The good news is that almost every chip we ever see comes from a handful of avoidable habits — not from the knife being fragile.

The short answer

Quality Japanese-steel knives (VG10 or AUS-10, around 60–61 HRC) are tough enough for everyday cooking. Chips come from cutting bone or frozen food, hard boards like glass or stone, twisting the blade, or the dishwasher — not from the steel itself. Avoid those and your edge will last.

Why people worry about chipping

A Japanese-steel knife is built to do two things a softer Western knife can't: hold a keener edge and hold it for longer. It manages that because the steel is hardened further — usually to around 60–61 on the Rockwell C scale (HRC) — and the edge is ground much thinner, often to roughly 15° per side rather than the 20° or so common on European knives.

That hardness and thinness are exactly why these knives cut so cleanly. But there's a trade-off built into metallurgy: the harder a steel gets, the better it holds an edge and the less it bends — which means that when it is pushed past its limit, it's more likely to lose a tiny piece of the edge (a micro-chip) than to simply roll over the way a softer blade would. A softer German knife tends to dent and roll; a harder Japanese blade tends to stay razor-sharp but asks you to treat the edge with a little more respect.

So the worry isn't unfounded — it's just usually misdirected. The steel isn't weak. It's specialised. Use it for what it's designed for and it rewards you; use it as a tin-opener and it will let you know.

What actually causes a Japanese knife to chip

In our experience, nearly every chipped edge traces back to one of these:

Cutting through bone. A thin gyuto or santoku is not a cleaver. Chicken joints, chop bones and pork ribs put a sudden sideways shock into a fine edge. For bone work, reach for a heavier Western cleaver or a dedicated boning knife and work around the bone rather than through it.

Frozen or very hard food. Frozen meat, hard winter squash skins, whole nutmeg, ice — anything rock-hard concentrates force on a few microns of edge. Let food thaw, or switch to a sturdier blade.

Hard cutting surfaces. This is the big one. Glass, granite, marble, stone and hard ceramic boards are harder than your knife's edge, so every cut is metal meeting something that won't give. Twisting, prying and scraping. Japanese blades are made to slice forwards and down, not to lever apart a squash, pop a jar lid, or scrape chopped food off the board with the fine edge (turn the knife over and use the spine instead). Sideways force is what a thin edge likes least.

The dishwasher. Knives knock against crockery and cutlery during the cycle, and the heat and harsh detergent are hard on both edge and handle. It's one of the quickest ways to chip a good knife — always hand-wash and dry instead.

Drops and careless storage. A knife rattling loose in a drawer, or landing tip-first on a tiled floor, can chip on impact. Store blades so the edges aren't banging into anything.

Sharpening the edge too thin. Grinding a very acute angle (below about 14° per side) leaves a beautiful but delicate edge that chips under everyday loads. Sharpen at the angle the knife was designed for — roughly 15° per side for most Japanese blades.

How hard is "too hard"? Understanding HRC

Hardness is measured on the Rockwell C scale. Most quality Japanese kitchen steels — VG10, AUS-10 — land around 60–61 HRC. Typical European knives sit lower, around 56–58 HRC. Some boutique blades push to 63–64 HRC and beyond for extreme edge retention.

Here's the part that matters for chipping: past roughly 64 HRC, steel becomes genuinely brittle and will chip readily even with careful use. Below about 58 HRC, it's very tough but loses its edge quickly. The 60–61 HRC band that VG10 and AUS-10 occupy is a deliberate sweet spot — hard enough for a long-lasting, keen edge, but still tough enough to shrug off normal kitchen work. Seven habits that stop your knife chipping

None of these are hard work. Together they'll keep a good edge intact for years:

1. Use a wooden or soft plastic board. Never glass, stone or ceramic. This single change prevents most chips.

2. Keep the knife off bone and frozen food. Match the blade to the job; use a cleaver or boning knife for anything hard or dense.

3. Slice, don't pry or twist. Let the edge cut forwards and down. Turn the knife over and use the spine to scrape food across the board.

4. Hand-wash and dry straight away. Skip the dishwasher entirely. A quick wash and a wipe protects both the edge and the handle.

5. Store the edge safely. A magnetic rack, a knife block, an in-drawer tray or the knife's own saya (sheath) all stop blades knocking together. Loose in a drawer is where chips are born.

6. Sharpen at the right angle. Around 15° per side on a whetstone. Don't chase an ultra-thin edge it can't support.

Don't panic — most chips are fixable. A small nick along the edge grinds out on a coarse whetstone (start on the 400 or 1000 grit, then work up through the finer stones to restore polish). You're simply removing a little metal until the edge is continuous again. A deeper chip means re-profiling more of the edge, which takes longer but is still very doable on a stone — or worth handing to a sharpening service if you'd rather not.
